Flavors take the stage in the year-long series of Farmer’s Market Menus in MUSE.  Each month brings a new food that is in-season and these rotating seasonal ingredients are featured in the Farmer’s Market tasting menus in MUSE. These prix fixe tasting menus are priced at $30 per person and are available most evenings for dinner. Farmer’s Market Menus change on approximately the fifth of each month. Teddy Bear Tea

November 29, 2009 12 p.m.

Designed for the young and young at heart, our Teddy Bear Tea is a perfect setting for an enchanted holiday afternoon.  Children and their favorite teddy will enjoy a delicious tea menu created especially for our pint-sized guests, while accompanying adults savor our traditional afternoon tea beverages, sandwiches and pastries.  Activities allow children to create their own bags of candy, enjoy holiday story-telling and music, take a photograph with teddy, and receive a teddy bear gift for at the end of the tea.This event is held in the Riverview Room.

This year’s hand-crafted house will featured a Nutcracker theme and will be composed of edibles, including over 50 pounds of powdered sugar, 25 pounds of molasses, and more than 1,000 gumdrops!

Thanksgiving Lunch and Dinner in MUSE

Thursday, November 26, 2009, 11 a.m. to 8 p.m.

Savor Thanksgiving lunch and dinner in the warm, relaxed atmosphere of MUSE. Begin with autumn squash bisque enhanced with apple chutney and hazelnut cream and then the chef’s mixed greens salad dressed with toasted cashews, currants and a fig and Riesling vinaigrette. Entrée selections include roasted turkey breast with herb whipped potatoes, cornbread stuffing, cranberry relish and giblet gravy; sliced beef tenderloin alongside garlic smashed fingerlings, fall vegetable medley and a thyme demi; and seared sea scallops atop sweet potato risotto, asparagus and a peanut brittle garnish. The sweet ending to the meal comes in the form of a selection of pastries including individual pumpkin pies, apple tarts and flourless chocolate cake.

Thanksgiving Brunch

Give thanks as you join with friends and family this year to celebrate the start of holiday season at The Ritz-Carlton. Traditional favorites and signature selections create this elegant brunch. Those desiring breakfast may visit the egg and omelet stations to pair their freshly baked pastries and seasonal fruit with eggs, apple-wood smoked bacon and Kentucky sausage links. The plentiful offerings continue with a fresh seafood display including smoked salmon, smoked shellfish and sushi. Rainbow carrot, cranberry bean and Ohio mixed greens salads complement the selection of main courses. Enjoy baked red snapper with fingerling potatoes, oregano and white wine; grilled chicken breast accompanied by creamed leeks, rice pilaf and thyme jus; roasted beef strip loin with smoked gouda polenta, cipollinis and demi; cream cheese and herb whipped potatoes; candied sweet potato casserole; roasted Thanksgiving root vegetables and green beans; and autumn squash bisque. No meal is complete without dessert, so our chefs have created a selection of tarts, including pumpkin, a flourless chocolate espresso cake with white chocolate mousse, warm apple cobbler carrot cake, macaroons and chocolate chip cookies.

The special four-course menu invites you to give way to the musings of the season. Begin with true flavors of the season as you enjoy roasted fennel bisque with cranberries and anise hyssop syrup. Guests will also enjoy the baby butter lettuce salad dressed with candied pecans, honey glazed pears and an ice wine vinaigrette. Holiday entrée choices feature prime rib served with wild mushroom bread pudding, carrots, brussel sprouts and natural jus; sliced beef tenderloin with bleu cheese whipped potatoes, mushrooms & onions, and a port wine demi; seared halibut alongside molasses cured eggplant, petite ratatouille, and buerre blanc; and vegetable risotto with Chef’s Garden baby vegetables, shaved Manchego cheese and lemon oil. Christmas Day Brunch

Friday, December 25, 2009, 12 p.m. to 3 p.m.

Enjoy a festive Christmas Day brunch served in The Ritz-Carlton Ballroom accompanied by live jazz music. The egg and omelet station serves eggs in various styles along with apple wood smoked bacon and Kentucky sausage links. Brunch features an elaborate display, including Ohio mixed greens and shaved fennel salads, as well as mezze platters of olives, baba ganoush and hummus with pita. Smoked salmon and smoked shellfish are paired with chopped eggs, onions, capers and crème fraiche. The highlight of the meal comes with entrees like pan seared salmon with spinach and white bean casoulet; beef tenderloin accompanied by holiday lentils and braised greens; gnocchi with black truffle butter and bacon; and grilled chicken breast served with stewed carrots, artichokes and crisp parsnips. Loaded whipped potatoes, an array of winter vegetables, brussel sprouts with shallots and roasted fennel bisque round out the meal. For those with a sweet tooth, the pastry chef has prepared a variety of tarts, chocolate cake with white chocolate mousse, chocolate chip cookies, blondies, florentines and macaroons, chocolate truffles, and spiced cheesecake.

New Year’s Eve Dinner at Muse

Partygoers say farewell to 2009 with an elegant multi-course presentation. Your last meal of the year begins with a Chef’s Inspiration amuse and a sun choke bisque topped with shaved white truffle and pancetta. The meal progresses with a petite garden collage served with an asparagus goat cheese terrine and blood orange vinaigrette. Beat poached scallops are then served with braised celery root and a vanilla beurre blanc. Entrée selections for the last night of 2009 include surf & turf of a petit filet, butter poached lobster, chive whipped potatoes and baby squash; seared halibut served with fingerling and sweet potatoes, creamed leeks and onion puree; and crisp duck breast atop turnip risotto, with swiss chard, citrus, and fennel cream. The dessert course features a trilogy of chocolate for 2010. The first seating is perfect for those with a planned night on the town, and the second seating comes complete with a champagne toast at Midnight for those who wish to savor the evening as we ring in 2009.
