A Connection to the Land & Culture

For Puerto Rico’s indigenous Taino people, the coa was the tool that allowed them to harvest the land. In reverence to this history, ingredients at COA restaurant are sourced seasonally and from local farms and purveyors, and signature dishes carry the flavor of Mi Brasa, a traditional, Spanish wood-burning oven.

Culinary Journeys

To understand a place and its people, one must simply look at what brings them around the table. Puerto Rico has a rich culinary history that began with the native Taino, and while it continues to evolve, indigenous ingredients still play an important role.
